Vegan Radish Toast

IMG_4728Radish on toast has become my newest favorite snack! Its salty, crisp, light, and super tasty. Here is a 2-minute recipe for a great new breakfast or snack. Sometimes I make it into a sandwich and pack it in my bag for later in the day.

Mexican Tofu Scramble

IMG_4720With all the holiday parties and yummy treats around I have been craving some really filling, clean breakfasts to start my day. Because of my work schedule I have barely had time for a smoothie and toast lately, so I took advantage of this lovely Saturday morning when I could put aside some home work and cook myself a real meal. This is a simple, clean, and healthy recipe for vegan Mexican tofu scramble. Yum!

Thanksgiving Potluck!

So my new DC friends and I gathered together over the weekend for an amazingly warm and cozy Thanksgiving potluck dinner. We had lime and sriracha brussel sprouts, sweet potato soup, biscuits, corn bread, cranberry sauce, roasted carrots and sweet potato, mashed potatoes, vegan dumplings, stuff mushrooms, brownies, apple pie, pumpkin pie, and spiced cider. And lots of red wine, of course. It was an amazing time and made me realize that I am so thankful that after only living in DC for 6 months that I could have met so many wonderful friends to share this holiday season with! Senegalese Peanut Soup

IMG_4644Its finally starting to feel like winter here in DC. Since I last posted a recipe I have moved to an even newer apartment in the city and am enjoying my new busier life! Its getting chilly in the city and I’m continually feeling like I am coming down with different colds and sore throats. I made this amazingly easy vegan Senegalese Peanut Soup; its got a bit of a kick to warm me up and made me feel so cozy which is exactly what I needed today!  Enjoy!

Kohlrabi, Summer Squash, Zucchini Salad

I’ve been getting a lot of kohlrabi and even though I’ve cooked with it before I usually just end up sauteing it and throwing it into a stir fry or curry. This time I really wanted to face it straight on and makes something delicious that would put it right in the center of the recipe. So here is a really simple kohlrabi, summer squash, and zucchini salad!
