Indian Cauliflower Pasta

I wasn’t in a mood to cook much tonight, but wanted to use some cauliflower I had in the fridge before it went bad. And, much to my surprise, I ended up creating some really tasty Indian cauliflower pasta that is not only delicious, but also warm, spicy, vegan, and unbelievably colorful. The cauliflower really took on the reds and yellows of the spices and it just looked absolutely beautiful. It was also super easy and took only about 15-20 minutes to prepare. Enjoy!

Salted Cucumbers

He prepared some salted cucumbers as I waited for his homemade gnocci dinner (a feat I will not be trying tonight) and I fell in love with the refreshing and addictive taste. Its a super simple snack, appetizer, or side dish that will leave you wanting more.

Cleansing Citrus

I realize some citruses may not be in season depending where you live, but luckily in Israel they are all fresh, ripe, and growing right outside of my kitchen.

Chickpea Blondies

Chickpea BlondiesAfter binging on some traditional Hannukah treats like potato pancakes and sufganiyot (delicious little donuts) last night with my roommates I was craving something clean, but still sweet, to eat today. The result? Guilt-free, dairy-free, gluten-free, egg-free, processed sugar-free totally tasty chickpea “blondies”. Mine came out super moist and really amazing, my roommate pointed out that they have a kind of banana-bread taste, so call them what you will, but they are absolutely phenomenal and an amazingly good and healthy addition to the holiday spread.

I am absolutely obsessed with sweet potatoes. Fun fact: in Hebrew the word for sweet potato is “batata”. Here are three new sweet potato recipes I’ve been enjoying over the past week (sweet potato burgers, sweet mashed sweet potatoes, and sweet potato quinoa salad) as well as two old sweet potato recipes (sweet potato fries and baked sweet potato).
