Eggplant, Bell Pepper, Balsamic Vinegar Salad

DSC07580Here is a super easy, perfectly delicious and vegan eggplant, bell pepper, balsamic vinegar salad. My mom and dad always grill eggplant, red pepper, and onions in balsamic vinegar so this is my play on their already tasty staple meal. I had my leftovers chilled the next day mixed with some white bean hummus and it was filling and phenomenal and delicious. Enjoy!

Tomato Soup

I learned this recipe from a dear friend, Roos le Roux, while volunteering this past summer at Le Moulin de Chaves in Cubjac, France. She told me it was one of the only soup recipes she knew and that it was incredibly simple to learn. So to the best of my memory as well as adding some yummy modifications here is a delicious vegan tomato soup recipe.
